T his recipe for warm chicken and bacon salad. In summer, with these heats, I practically eat salads, of the most varied (yes) but salads after all. I always say that a salad never tires, there are a thousand options to change flavors and colors for this dish, and with the right dressing, we have a healthy and complete dish. This one that I present to you is complete of course. When I prepare it, I make it as a single dish and don’t see how full it is.
The good thing about this salad is not only to eat healthy and light, but also to introduce the term warm . And it is that salads can be eaten hot and of almost anything, with sardines, cod, citrus, sweet fruits such as mango or peach, seasoned with a consistent or super light vinaigrette … All the ingredients are important, just like each musician has his place in an orchestra, but special attention must be paid to oil and vinegar.
Preparation of the warm salad
- We cut the chicken fillets into tacos.
- We put a pan with 2 tablespoons of olive oil, and when it is very hot, incorporate the chicken, and let it brown over medium-high heat. When it is taking toasted color, add the bacon, cut into small pieces and keep until both are well browned.
- We cut the tomato into small cubes of approximately 1 cm.
- We proceed to assemble the salad. To do this, we put a bed of various lettuces on a wide source.
- We add the diced tomato and some goat cheese curlers.
- Add the chicken stir-fry and bacon fresh from the pan on top and decorate with the garlic croutons.
- At the time of serving we prepare a soft vinaigrette. Add a pinch of salt and freshly ground black pepper to a glass. We introduce the extra virgin olive oil and the Modena vinegar. Stir vigorously until tied. We dress the salad to taste and ready to take to the table. Bon Appetite.

- A more than complete salad, delicious and palatable for its cold-hot contrast.
- I usually buy chicken sirloins at Mercadona, I imagine you can find them in any supermarket. For my taste, much more tender than the breast and they are perfect to make chicken tail, or to put in taquitos in salads.
