Today’s recipe is one of those that with little that we have at home, we will have a plate to lick our fingers, a vice sauce and a tender and very tasty meat. We have prepared  sirloin with whiskey , and for this we need a good pork sirloin, either Iberian or bait, having a tasty and quality meat is important. The rest of the ingredients are simple, whiskey, it does not have to be twelve years old, the one we have at home will be fine, some garlic, onion and a little lemon juice, they are all we need to prepare this meat in a tasty way and fast.

We will cut the meat to our liking, either in thick medallions, or a little finer as mini fillets. It is about marking them lightly to seal the meat and cooking them later in the whiskey sauce. The contribution of lemon combined with the liquor will give it a substance of its own, do not worry that it will not taste like whiskey at all, and it will not have any type of alcohol, we will be left with a very tasty, dense and aromatic sauce, perfect to serve as a first plate or as a snack at a dinner with friends.

Preparation of pork tenderloin with whiskey

  1. We clean the pork sirloin of any leftover fat it may have and clean it well with a kitchen paper. We cut the sirloin into 1.5 cm medallions. thick.
  2. Heat a splash of oil in a large skillet and mark the pork tenderloin medallions. It is about marking them, not frying or cooking them completely. When we see that the salting begins to brown, we remove them and reserve.
  3. Peel the onion and cut it into cubes. We also peel the garlic cloves and leave them whole. In the same pan in which we have marked the meat, we are going to make the whiskey sauce. Add a splash of olive oil and, when hot, add the chopped onion and whole garlic.
  4. Fry the vegetables until the onion is soft, about 15 to 20 minutes over medium low heat, stirring occasionally to avoid burning.

Final preparation and presentation of the sirloin with whiskey

  1. Add the whiskey to the pan and let the alcohol evaporate for 2 or 3 minutes. Add the lemon juice and salt. We cook for 10 more minutes. We can pass the sauce through the mixer or the mash or leave it as it is, finding the stumbling blocks. This time I have crushed it to make it finer.
  2. Add the meat medallions to the pan with the sauce and cook for 3 more minutes. We serve the meat very hot accompanied by some fried potatoes watered with the whiskey sauce, to lick your fingers.

The medallions pork whiskey are simple, quick and delicious way to prepare this handy piece of pork. The sauce provides a touch of sweetness thanks to the whiskey, and acidity thanks to the lemon, leaving a very good sauce. Remember that it is a recipe for dipping bread, so buy a good piece of bread.

In addition you can change the whiskey for another type of alcohol, rum, cognac, brandy, … even sweet wines are left with vice, obtaining practically the same results. A very easy and flavorful dish.
