Ingredients

  • 1 cup of white long grain rice (approximately 300 grams)
  • 1/2 cup fried tomato sauce
  • 2 cups water or vegetable broth (you could also make chicken, poultry, or meat broth)
  • 2 cloves of garlic
  • 1/2 white or purple onion
  • 1 green chili
  • 1 dessert spoon of cumin powder
  • Salt and freshly ground black pepper (to each household’s taste)
  • Vegetable oil or olive oil (3 large tablespoons)
  • To present: A little fresh cilantro

Mexican cuisine is not extremely homemade, traditional and local as long as it is not accompanied by other preparations with red rice , a staple in its cuisine. It is a type of rice with tomato and outside the country it is called Mexican rice .

One of the determining characteristics of Mexican cuisine is the variety of colors it shows. Red rice is precisely one of the rice dishes that contributes with this characteristic and although white rice is a delight in itself and works perfectly as a garnish, Mexican rice gives us greater seasoning, and therefore, greater flavor.

Preparation of Mexican red rice

  1. The first step will be to peel and chop the garlic cloves very finely. Next, we will peel and chop our onion and green chili into small cubes. We will put a splash of oil in a large, non-stick pot (approximately 3 tablespoons) and heat it over medium heat. When the oil is hot, we will add the garlic and onion and cook it for 2 or 3 minutes.
  2. Then we will lightly fry the rice and add the pepper and salt to taste along with the cumin. Stir everything well so that the flavors integrate.
  3. We let the rice cook for approximately 5 minutes, stirring frequently to prevent it from burning.
  4. When the time has elapsed, we will have to add the fried tomato sauce. We will continue mixing and then add the chicken broth or water if you do not have this type of broth. This mixture that will be formed is what is known in Mexico as “ caldillo de tomato ”. We can also make this rice with poultry broth, meat broth or vegetable broth (if you want a vegetarian rice), to your liking.
  5. After making the mixture we will have to lower the heat and let our rice cook with the pot covered and without moving it for 20 minutes.
  6. Next, we will uncover the rice and if we see that the liquid has not been completely absorbed, we can let it cook for 5 more minutes. On stoves where the power is not very high, it may take up to 30 minutes for the rice to cook.
  7. We will have finished, the only thing left is to serve it with a little cilantro on top and we will have an incredible rice that will serve as an accompaniment to countless foods.
