It is one of the specialties of Córdoba and not for nothing, fried eggplants with honey are a delicious dish that we always order when we find them in a restaurant. That combination of sweet and salty is a wonder for the senses and the truth is, we really wanted to be able to make it at home.

We have already brought you an alternative that is also delicious, baked eggplants with honey in case you want to enjoy this dish in its healthiest version, but in this recipe we go with everything. With its frying, its honey and its original flavor. This is such a simple recipe that you don’t need much technique to prepare it, but you do need to follow a series of tips that I encourage you to read in our post on tips for making eggplants with delicious honey.

It is worth trying to cook it at home, we assure you that the result is spectacular. Don’t forget other recipes from Cordoban cuisine, such as its famous flamenquines , a good plate of salmorejo or the traditional Cordoban stewed tail , all delicious.

Eggplant with honey recipe

  1. We wash the eggplants well, peel them and cut them into strips or slices (in this case they are in sticks, in strips so that they are more crunchy) but you can also make them in slices to accompany another recipe. On the blog you have the Cordoban-style stewed oxtail accompanied by fried eggplants in honey, a great recipe that I encourage you to try.
  2. Once they are cut, we put them in salted water for 15 minutes to remove the bitterness.
  3. After 15 minutes, we coat them with flour and fry them in plenty of very hot oil in small batches, to prevent them from cooling.
  4. Once they are fried, we place them on a container with kitchen paper to absorb the excess oil and place them on a tray. Before serving, we add a little salt and a splash of honey on top.

Tips for perfect fried eggplants with honey

  • The ideal is to accompany these eggplants with a good salmorejo in pure Cordoban style.
  • If you want the eggplants to not be oily, the ideal is before coating and frying, leaving them for 15 minutes in a carbonated liquid , such as soda or beer.
  • If you feel like it, you can leave the skin on the eggplants . It will give a very particular touch to your dish.
  • Optionally you can reduce the cane honey sauce with a little soy sauce. That way they aren’t as sweet. It is a little trick that I have been told in some Andalusian restaurant, although it is not the traditional recipe, so no one should be offended.
