Although this salad is not exactly the Granada dip, orange in oil, orange salad or orange dip , the truth is that it is very similar. It is usually prepared with orange in almost all the provinces of Andalusia: Almería, Granada, Málaga, Córdoba and Jaén. Depending on the area they call it one way or another, and the quantities and ingredients vary, in some places the cod is added without desalting, only crumbled, in many it is roasted, in others it becomes raw … the variations are endless. Other possible ingredients include olives, eggs, onions or chives, garlic, vinegar, paprika, potatoes, or tomato. These versions are served as a cold first course, very tasty and nutritious. A little originality and you will have your perfect orange or tangerine salad.
A salad as a first course, delicious at a summer dinner, a great combination of fruit flavors with that of the sea. We have changed the two main ingredients of the famous soaking , to make the recipe quick and simple, without losing its sea and citrus flavor. The cod is smoked and of great quality, the tangerines, if they are fresh, should not have seeds that bother them at mealtime (in this case they are already sent to us in a can, so it can be done throughout the year) and that the sauce is thick, with memories of the acidic flavors of vinegar and tangerine. A way of cooking something different and healthy, without too many complications. I hope you like it.
Preparation of the cod and mandarin salad
- We start with the dressing or special vinaigrette. For the first one we only need a bottle, we mix the ingredients of the dressing and shake until it is linked, we test if you need a little salt or more vinegar, this dressing goes to taste.
- For the second option we will make a reduction of the vinegar that we are going to use, for this, we put it in a saucepan and leave it on the fire until it reduces by half. Next, we add the juice of the tangerines and a teaspoon of Galician honey, until it reduces again about half. Let cool, put it in a bowl and add the oil, salt and pepper. With a whisk, we emulsify or beat well until we see a well-linked sauce. Perfect for this sweet and savory salad. It will even give a different touch to the typical lettuce and tomato salad, the one of every day
- We prepare a wide source that is not deep, we paint it with a little bit of the dressing that we have prepared. If we are going to use lettuce, we chop it by hand into comfortable pieces to eat. If you use a mezclum salad bag, with several types of salad, you just have to spread it over the surface of the fountain.
- If the tangerines are fresh, we peel them and remove the skin that the wedges bring.
- Next we put the slices of smoked cod, we paint again with the sauce and finally the tangerine segments without seeds in case they are in season.
- Finally, when we go to serve, we paint it again with the dressing, so that it shines. Dressing in this way, the layers are impregnated with all the flavor of the reduced tangerine together with the vinegar and the salad is not flooded with sauce.
