How to make a homemade French toast bread .

As a child at home, in Galicia, we have always prepared French toast at Easter . We used the bread, already hard from previous days, which we kept waiting for the moment to put on our boots with the longed-for French toast. It was not until I arrived in Madrid when I discovered that there was a typical and own bread to prepare this dessert.

At this time it is easy to find French  toast bread in bakeries and patisseries , but the reality is that there is no reason why we cannot prepare it ourselves to make French toast at home.

Taking into account the exorbitant price that this bread can reach, I assure you that it is worth getting down to work. It is about making a bread with the ideal crumb texture so that it is able to absorb the milk with which we are going to soak it without it breaking or falling apart. The crumb has to be compact but not caked, consistent.

The type of bread that is good for some French toast is usually the basic candeal enriched with a little milk, it does not contain butter or oil, nor is it made with sourdough .

It is so simple that almost the smallest of the house can do it. The rising times do not have to be very long and it is not necessary to mix too much.

Preparation of the French toast bread

  1. We heat the milk until it is warm and dissolve the sugar and salt in it.
  2. We dissolve the yeast in the milk and add the egg. We beat well until the ingredients are mixed.
  3. Add the flour and begin to incorporate the ingredients with a wooden spoon.
  4. We dump the dough on a floured surface and begin to knead until it does not stick to the hands.
  5. We work the dough kneading vigorously for 5 minutes and let it rest for another 15 minutes. If we use fresh baker’s yeast, the resting time will be about 7 minutes.
  6. We give the dough an elongated shape and let it rest covered in a place free of currents.
  7. About 1 hour if we use dry baker’s yeast and, perhaps less time, about 30 minutes if the yeast is fresh.

Baking and final presentation of the French toast bread

  1. We preheat the oven to 220º C with heat up and down.
  2. Once it has fermented and increased in volume, we paint the egg optionally so that it has a better appearance.
  3. We put the bread in the middle tray and lower the temperature to 190º C.
  4. Bake with temperature up and down for about 30 minutes. The time is approximate because it depends on the oven, we have to notice that the French toast bread is taking a nice golden color on the surface.
  5. We take care that it does not toast too much during baking. For this, when we have 15 minutes we cover the bread with aluminum foil to avoid that the surface is toasted too much.
  6. We remove from the oven and let it rest on a rack. As soon as it is hardened, we can cut the slices for our French toast.
  7. Although I recommend leaving it for at least 2 hours in the air so that it is drier and soaks more milk.

Tips for a perfect French toast bread

  • When we have the bread at rest as an option we can make some transversal cuts in each bar, these will mark the width of the bread slices that we will then cut to make the French toast.
  • Optionally when we go to bake we can paint beaten egg with a few drops of milk (thus we avoid burning the surface, something similar to when we make a brioche or a roscón de reyes) the surface of our bread so that it has a golden appearance, it is just that, a better look.
  • Remember that you will get perfect slices of crumb to soak up all the milk you have infused and that they do not break when passing through the egg. Also this bread is not satisfied with a liter of milk, it needs at least two. Imagine the result.
