On these dates I have an almost clear option for Christmas food. I feel like sole and I have decided with a quick, simple recipe that uses orange , one of the seasonal fruits that I like the most. And it is that these dates are full of a lot of a little heavy meals, a little fruit, although it comes in this format it always comes in handy, who doesn’t get a dose of extra vitamin C?

My fishmonger, who is an artist, knows perfectly how to prepare the sole , and he has recommended it to me with an orange or tangerine sauce. Normally, in all fishmongers, they remove the skin from the sole, but if they do not remove it, tell the fishmonger. They have to remove both dark skin on one side and lighter skin on the other. Some people prefer to buy a large piece of fish, but I have opted for medium sole, as for a single serving. I have calculated a sole per person, but if you are going to put a very light first course, salad type, maybe you need two sole per diner, so as not to be hungry!

I like to add, in addition to the orange juice, the zest . When you scratch the skin of any citrus, try not to get to the whitest part, because this will add a bitter point to your sauce. The orange table , usually sweeter than orange juice , but you can use that you have at home, as I have done. Some people add a little brown sugar to sweeten and give a darker color to the orange sauce. I prefer the sweetness of the fruit itself and to thicken and quench that strong orange color a little, I add a little ground almond and prepare a sweet onion sauce, which I grind together with the sauce. This way I get the ideal texture to accompany the sole.

This recipe with sole is similar to baked sole and is for its softness, flavor and texture, a dish that will surely delight your diners. It is easy to make and ideal for a holiday. You will undoubtedly be amazed at how well the flavors combine. Perfect for a first course and that the smallest of the house will give a good account of.

Preparation of sole with orange

  1. We clean the soles, season them, coat them and fry them with plenty of oil, over medium heat, until they are golden. We reserve in a baking dish.
  2. Chop the onion into small pieces and fry until it is transparent and a little golden. We reserve.
  3. We prepare the juice of two oranges and the zest of another. We put it in a saucepan over medium heat, along with the butter and the ground almond. We will remove often. We will leave it until the butter has been discarded and the sauce is boiling. At that point, we remove it from the fire.
  4. Add the sauce and the fried onion to the blender container. Whisk until all the ingredients are integrated and there are no onion remains. We water the soles with the orange sauce. Cut the cherry tomatoes in the center and put them in the source.
  5. We put the source in the oven at 200 ° C, with heat up and down, for ten minutes, taking care not to burn or consume the sauce too much. After the indicated time, we remove it and plaster.
  6. We can now prepare the dishes, accompanying each sole with a little sauce and some cherry tomatoes. Serve immediately and very hot. Accompanied by a simple lettuce and tomato salad, it is a very complete dish.

To decorate the plate, you can use the skin of one of the oranges in the juice and make half moons. Cherry tomatoes will add a touch of color to this simple and delicious dish. A very tasty recipe, suitable for dipping good bread and enjoying cooking the fish in the oven.

The recipe is equally good to make with other fish such as roosters, turbot and other white fish. The flavor of the orange sauce goes perfectly with the flavor of the fish with whom it harmonizes perfectly.
