What do you think of today’s recipe? Easy and full of all the flavor of the sea that seafood and a salmon bring us that will give consistency to the recipe, in a format that will not leave children indifferent and that can serve both as a daily dish and for those days specials coming soon. A few months ago I presented you with a similar recipe of Swedish origin:  the salmon burgers or Laxwallenbergare   by friend Myriam. There, salmon is the king ingredient and there are several very popular dishes, one of them is gravlax , made from fresh salmon marinated with dill, sugar, salt and white pepper. It is a succulent and delicious preparation, the one in today’s recipe is just as simple but a little more lucid, and if we accompany it with this Galician potato timbale  we also give a touch of my land.

This type of fish preparation is  perfect for children  at home to eat fish without protest, they are very juicy, almost melt in the mouth. On other occasions I have presented you   with meatballs with  tasty mackerel   or soft ones with cod ,  fish dishes that succeed among children. We have chosen  salmon as the main ingredient , a blue or fatty fish that provides about 11 grams of fat for every 100 grams of meat. As for vitamins, the presence of some belonging to group B stands out. In addition, the richness in fat of salmon means that it contains significant amounts of some fat-soluble vitamins such as A and D. It is a source of magnesium and iodine, and its average content of Iron is lower than most fish. It must be an essential food in our diet, since it is heart-healthy due to its high content of monounsaturated and polyunsaturated fats, which help to increase the levels of “good” cholesterol and lower those of the bad.

It contains the famous omega-3 fatty acids  , which in so many foods they are trying to introduce artificially. I think that to enjoy the benefits of omega-3 we should look for it especially in blue fish, in this salmon, in sardines, tuna, horse mackerel, northern tuna … These acids reduce the risk of cardiovascular diseases, promote health of the nervous system and strengthen the immune system. So these meatballs are a source of health in addition to being delicious, do not hesitate, they will be perfect to eat a little better at home.

Prawn preparation

  1. For this recipe you can choose the ones you like the most but I recommend that they be fresh prawns. If you buy them frozen, let them thaw well the day before in the fridge so that they can be handled the next day. We peel them, remove the head and the shell that protects them.
  2. We put a wide casserole with very hot water and two bay leaves and add the heads and shell of the prawns to cook over medium heat for ten minutes. While we cook the heads we will prepare the salmon and then we will continue with this wonderful broth.
  3. Once we have the prawns already peeled, we remove the intestine (the black thread in the center) and reserve the tails.

Preparation of salmon meatballs:

  1. We start by shredding the salmon, we remove the skin and the few bones that it brings.
  2. In the previous casserole with the seafood broth, add the bones and some leftover pieces of salmon. We bring to a boil and when the first spurts begin we lower to medium heat. Let it cook for about 20 minutes and remove the foam that forms on top of the water.
  3. Chop the salmon and prawns into small pieces. In a bowl we crumble the breadcrumb crumb and soak in milk, let it rest. We put the salmon and prawns in a large bowl where we will mix the ingredients. Add the minced garlic and parsley, salt and let stand a few minutes.
  4. Now add the well-drained sliced ​​bread and the beaten egg into the mixture. We mix and check the consistency of our dough. We are adding breadcrumbs little by little and mixing until we reach a consistent dough that does not dissolve, depending on the type of breadcrumb we use, we will have to add more or less, remember that it is of quality.
  5. We will prepare the rest of the recipe in a low saucepan, we put abundant extra virgin olive oil to heat. We make some balls of fish dough or meatballs that are not very large (golf ball size) so that they are perfectly made inside. We pass the meatballs in wheat flour and fry over high heat, round and round until golden brown. We are reserving them on an absorbent kitchen paper.
  6. Chop the onion and poach it in the same oil for about 10 minutes over medium heat. Once at its point, we incorporate the meatballs into the casserole and add the shrimp and salmon fumet or broth that before we will have passed through a strainer, until it reaches half of the meatballs. We let cook over medium heat for 15 minutes so that the sauce thickens. We turn the meatballs halfway through cooking.
  7. As an accompaniment I have chosen some cooked potatoes, as you can see the total preparation is 30 minutes, which is just what we need to make our cachelos or cooked potatoes perfectly. Many of you ask me by email where to buy the famous cachelos, but it is not a type of Galician potato but a way of cooking it . In Galicia, in the past, it was used to cook the potato with its skin in chunks, normally in the middle and put it in the casserole with a little salt. Now people usually peel the potatoes although I love them with the skin so at home they always eat it, try them and you will see how good they are.
  8. For those who do not know how to prepare cooked potatoes it is extremely simple. Add the whole potatoes with or without skin (as you like) to cook in a large saucepan with water and salt. We cook them for 15-20 minutes, it will depend on the potato and the type of cuisine we have, so we are testing that they are tender without breaking, pricking them occasionally with a fork. When we see that they are already drained, remove them to a source and then mash with a fork, adding a little fish and seafood broth to facilitate the work.
  9. We present on a nice plate, we help ourselves with a metal mold and we make a potato cylinder all watered with meatball sauce. We serve the meatballs very hot.

You can also accompany this dish with some fried potatoes, another alternative is to make white rice as a garnish, white rice is perfect to mix it with the meatball sauce and without realizing it you have made a great dinner. Pasta or cooked potatoes or mashed potatoes are also very good for you , in any form they will be delicious! Enjoy!
