Its success and presence in our kitchens is not surprising, as potatoes are one of the staples of our gastronomic scene.

- We will start by peeling the potatoes and cutting them into slices about the thickness of a finger or an inch. Once cut, we salt them.

- In a large skillet, we will put enough oil and fry the potatoes until golden.
- We take them out and reserve them in a large source so that they are not crowded together. Avoid battering the batter when piling them up.
- Strain the oil used to fry the potatoes and use it again for the sauce. We reserve.
- Chop the onion and, using the strained oil to make a base in the pan, we will add it to the pan. Chop the garlic and parsley, reserve.
Sofrito. Preparation of the sauce and final presentation
- When the onion is transparent, add the chopped garlic and parsley and fry until golden brown
- Add to the sauce a glass of white wine, which should be at room temperature, a glass of broth and saffron.
- Let it boil for about 2 minutes so that the alcohol evaporates.
- Taking care not to break the batter, put the potatoes in the pan and let them cook over low heat for about 30 minutes.
- It is important that the cooking is slow, to prevent the batter from breaking. Serve immediately so that the potato does not take over the entire broth.
And it’s ready! It is very easy to make and cheap.
