How to make cod in the pan .

After some 60 cod recipes on the blog, you could say that it is one of my favorite fish .

Because of its texture, its flavor, its versatility in the kitchen, and also because with little elaboration we are able to produce delicious dishes. Whether fresh or salted cod , this fish gives us the possibility of eating healthy, rich and delicious.

There is also no shortage of recipes from our neighbors in Portugal, some authentic kings of cod. Among others, I recommend the Portuguese style cod or the golden cod or bacalhau à bras.

This pan-fried cod is very easy to prepare. With basic ingredients and a small step by step, we get a first class dish. Instead of a casserole or squid, we will cook it in a frying pan, hence the name of the recipe. All the step by step from the beginning will be in the pan, without major complications.

To succeed in our recipes with cod, the main thing is to have the best raw material. You can choose salty pieces, which will mean that we will have to desalinate the cod or directly buy some cod loins already desalted, and ready to cook.

The salted cod has a characteristic dot that I love, but hey, we don’t always have time to plan the recipes.

Preparation of eggs and cod

  1. We put the eggs to cook in a saucepan. 11 to 12 minutes is the necessary time, from when the water begins to boil.   
  2. We pass the loins by flour, coating them well on all sides.
  3. We fry them in a pan with extra virgin olive oil, round and round, until golden. We withdraw and reserve.
  4. Peel the garlic cloves. We cut them into sheets. We fry them in the pan, over medium heat, and in the same oil. When they start to roast, we remove them.
  5. We put out the fire. We let the oil cool down. Add the paprika, and mix well. The oil cannot be hot, so that the paprika does not burn.

Preparation of cod in the pan

  1. We return to put the pan on medium heat, now we pour the fried tomato. Mix well, until the mixture is well integrated. Let cook 5 minutes over low heat. We salt to taste.
  2. At this point, we place the cod loins in the pan. We continue cooking another 5 minutes.
  3. We turn off the heat, cover the pan (a casserole lid that suits) and let stand 4/5 minutes.
  4. Peel the cooked eggs. We serve the cod with a little sauce and the eggs in halves.

A very simple dish to prepare, which you will surely love. For the garnish, a white rice or some potatoes in bakery , they are good options to accompany our cod in the pan.

Tips for a pan-fried cod.

  • We will choose good quality cod loins , as it is the main ingredient. In the market you will find several options, but I recommend you make an effort and buy a good product.
  • If the loins are of good thickness, keep this in mind when frying them, to do it on all sides. The same for when we cook them in the sauce, in the final part of the preparation. So that they are cooked in the same way in their entirety.
  • I insist on the issue of not burning the paprika. The oil must be warm, pulling cold. As soon as we put it in the pan, stir well so that it integrates and does not burn at any time. The paprika can be sweet or spicy, depending on your taste.
