Although the cream cheese is among its ingredients, it has nothing to do with the cheesecakes or quesadas . It is a spongy, moist and juicy sponge cake. The cheese will add flavor and texture, keeping the juicy and dense crumb of the classic sponge cake.

I have used a hollow mold in the center and it is what I advise you to use. The mixture of the dough is quite dense, therefore, if we want to make a high sponge cake, we must use a mold that allows air circulation. This will ensure that it is perfectly cooked inside. Although you can also do it with the mold you have at home, control the diameter of it so that it fits you well.

Preparation of the cheese cake

  1. In a bowl, beat the butter with the sugar. The butter needs to have an ointment texture to be able to work it. We must beat the mixture until it turns whitish.
  2. We add the eggs one by one, whisking to integrate it before adding the next one.
  3. Add the cream cheese and the lemon zest.
  4. We mix well to integrate the ingredients until we get a homogeneous cream.
  5. In a bowl, mix the flour with the yeast and the baking soda. We add these dry ingredients to the mixture by sifting them. We carefully integrate all the ingredients without beating the mixture excessively. It’s about combining the ingredients just right.

Baking and final presentation of the cheese cake

  1. Spread the chosen mold for the cake with butter and pour the mixture. We settle the mixture in the mold and, with the oven previously heated to 180ºC, bake for 40 minutes. Heat up and down in the middle pan.
  2. We check that the cake is ready by pricking it with a stick and observing that it comes out clean.
  3. Let the sponge cake cool for 10 minutes, without removing the mold, on a wire rack.
  4. Unmold and keep it on the rack until it has cooled completely.
