Today we bring you a reinterpretation of a typical Andalusian dish, fried eggplants with honey . This is a true « cardinale sandwich » but, things as they are, being fried they are not particularly light or healthy that we can say, although a treat from time to time never hurts.

However, this recipe changes frying to baking , thus leaving a much milder recipe adapted to all audiences without sacrificing flavor. How wonderful the oven !

Its preparation is super simple and fast, but the result is something from another world. It is a great dish as a starter or appetizer that will not leave anyone indifferent.

Preparation of baked eggplants with honey

  1. We wash the eggplants and cut them into thin slices with a similar thickness. The thickness size is important. If you cut them very thin they will be crispy, but if you want them tender cut them a little thicker.
  2. We put the slices in a bowl with water and a teaspoon of salt to eliminate the bitterness and let them rest for 20 minutes. Then drain them.
  3. We preheat the oven to 200º C.
  4. We prepare a tray with baking paper, pouring a splash of extra virgin olive oil and a little salt on top.
  5. Coat the eggplant slices in durum wheat semolina on both sides and place them on the tray without them being on top of each other.
  6. When the oven is ready, put the tray with the eggplants in the oven for 15 minutes. This time can vary depending on the thickness of the eggplants, 10 minutes if they are very thin and up to 20 if they are plump.
  7. Once they are ready, we take them out of the oven and transfer them to the container where you are going to serve them. There, we pour honey on top, dropping a trickle of honey throughout the plate so that it is well distributed.

Tips for perfect baked eggplants with honey.

  • Durum wheat semolina is easy to find in supermarkets, but if you don’t have it on hand, you can use breadcrumbs and the result will be very similar.
  • If you are fans of cheese, you can add a little grated cheese to the eggplants before putting them in the oven. The result is spectacular.
  • Try to keep the thickness of the slices as similar as possible . If not, it is possible that some will burn and others will remain raw.
  • And if you like an Asian touch, you can use a little soy sauce, a touch of umami to bake the eggplants.
