For the cake plate with dots

  1. We start with the mass of the moles, which is made with a cocoa base and has a stronger color than the rest.
  2. Mix the egg white, sugar, flour and cocoa.
  3. Add the butter and enough coloring to obtain a very dark pink color. We beat until we have a homogeneous mass.
  4. We pass the dough to a pastry bag with a small smooth nozzle and form circles of equal size on a sheet of vegetable paper.
  5. We place the sheet on a table or baking tray and freeze until we go to bake the cake plate.
  6. For the outer cake plate. We beat the eggs together with the salt, sugar and vanilla until white.
  7. Better if we do it with a kitchen robot or electric rods because this step takes some time and there is no arm that can support it manually.
  8. Add the coloring and beat again until incorporated.
  9. Next we add the flour, which we will have previously sieved, and mix with a silicone tongue with enveloping movements, from bottom to top and gently.
  10. When there are no traces of flour or lumps, remove the paper with the moles from the freezer, place it on a baking sheet and pour the dough on it.

Baking the sponge sheets

  1. We cook in the oven, preheated to 180 ºC with heat up and down, for 15 minutes.
  2. Meanwhile we prepare a clean kitchen cloth and sprinkle with icing sugar.
  3. We remove the sponge cake plate with polka dots from the oven, turn over the cloth, unmold and carefully remove the baking paper.
  4. Sprinkle the upper side of the cake with icing sugar.
  5. We roll the sponge cake sheet in hot, ensuring that the face with the moles is out. Let it cold down.

For the cream cheese filling

  1. We beat the cheese with the icing sugar and the vanilla. Add the whipped cream and stir gently until incorporated. We remove 1/4 part to a smaller container and add the coloring.
  2. We reserve the two creams in the fridge until we need them.

  1. We cover a cookie sheet with parchment paper.

  7. We remove from the oven, transfer to a metal rack and let cool completely.
  8. When the cake plate is cold, cut with a heart-shaped cutter.
  9. We combine the hearts with the pink cheese cream, forming a tube.
  10. We wrap it in plastic wrap and freeze it so that it takes on a body and is easier to handle when assembling the arm.

Mounting the gypsy arm for Valentine

  1. Carefully unroll the biscuit sheet and cover the inside with the cream cheese.
  2. We put the heart tube in the center with the tip up and spread it with a little of the cream.
  3. Roll up again, wrap in plastic wrap and freeze for three to four hours.
  4. When the arm is very firm, we cut the ends and clean the possible loss of filling on the part of the joint.
  5. We allow to temper before serving.
