How to prepare fried rice three delicacies .

Although we are used to seeing  rice recipes of  this style in Chinese restaurants, it is not what is called a properly Chinese dish.

This way of enriching fried white rice is part of that strange Chinese-American culture. A recipe that was developed in the United States in the late 19th and early 20th centuries.

Fried rice itself is a very popular component of Chinese cuisine that is usually served as an accompaniment to another dish or, in this case, a dish itself.

In Venezuela and Colombia it is known as ” Chinese rice “, in Peru it is called ” chaufa rice “, in Ecuador it is called ” Chaulafan ” and in Peru you have a very similar one, Arab rice .

It is still a rice that you can prepare in a moment with easy-to-find ingredients. You can add almost anything you have on hand or in the fridge. Although the best known in Spain,  the rice tres delicias , is with three main ingredients:  prawns, omelette and cooked ham .

Once we have all the sauteed ingredients we just have to mix with the previously boiled Brillante Sabroz rice, which due to its properties is perfect for making fried rice. It also perfectly withstands a stir fry, being loose and full of flavor.

Preparation of fried rice three delicacies

  1. Cook the prawns for no more than 2 minutes. Drain, peel and reserve the tails.
  2. We can use fresh or frozen prawns. Today in the market we can find high quality frozen products.
  3. Cook the peas and the diced carrots in slightly salted water. We cook the vegetables for 10-12 minutes, drain and reserve.
  4. We cut the cooked ham into strips and brown it in a pan with a thread of oil. We reserve.
  5. In a saucepan we heat about 600 ml. of salted water. When the water begins to boil add the rice.
  6. Cook the rice over medium heat for 18 minutes. We want the rice to remain with a point of hardness.
  7. Once cooked we wash the rice to stop the dry cooking and leave it loose, drain well.

Omelette preparation

  1. We prepare an omelette with the eggs, heat the pan in which we have sautéed the ham with 1 tablespoon of oil.
  2. We beat the eggs with a pinch of salt. When the oil is hot, pour in the beaten egg.
  3. You just have to cover the bottom of the pan, it must be quite thin. When it is ready we remove it from the fire and cut into very thin strips. We reserve.

Final presentation of the rice three delicacies

  1. In a wide saucepan, heat a splash of olive oil. Add the well-drained rice and brown for a few minutes.
  2. We add the rest of the ingredients to the rice, peas, carrots, cooked ham, omelette and prawns.
  3. We mix well while we cook 2 or 3 more minutes, to integrate all the flavors.
  4. I like the crispy touch it gives the rice. Finally we rectify with salt and serve very hot accompanied by soy sauce to the taste of the diner.

This dish is usually used as a garnish for others, for example, sweet and sour pork, duck with bamboo, chicken with mushrooms, shrimp curry, …

Tips for a perfect three delicious fried rice

  • The ingredients used in making  fried rice  vary greatly depending on the area of ​​the world in which you are. They usually include carrots, bean sprouts, celery, peas, and other meats such as chicken, pork, prawns, or sweet cooked ham.
  • In western Chinese restaurants they have been inventing their own varieties. You will find them with fried egg, spicy in the so-called “ Singapore rice ” and “ the fried rice ” that we find in Spain.
  • It also includes pieces of egg to give it color and it is usually accompanied with a bowl of soy sauce to add a more salty touch.
  • You can accompany your rice with soy sauce, it is optional. But if you do, keep in mind what type of soy sauce you are going to use. I recommend a somewhat powerful soy sauce, that is salty not sweet. It will be perfect for this recipe.
  • For this type of rice I have used a mild olive oil but the best thing in an Asian recipe is to use seed oil. You can even when the recipe is done add a few drops of sesame oil to flavor, it gives a delicious oriental touch.
