The friend and renowned barista Oscar de Toro teaches us all his secrets to prepare one of the oldest infusions, that of coffee.

Also well known in Portugal or Brazil. This is the oldest and most traditional system of preparing coffee.

It is an infusion, but in this case the coffee is much coarser ground and it is left to steep for a while in hot water. The infusion obtained can be served by decantation or can be strained by passing it through a sleeve or cloth.

This type of coffee is perhaps one of those coffees with souvenirs included, since in all the town festivals it is the one that is usually prepared after lunch.

It is one of those special moments of after dinner of a family Sunday meal. 

Preparation of Pota coffee or pot

  1. We pour 1 liter of cold water in a large saucepan or squid. We add 60 gr. sugar (4 tablespoons) and stir. Oscar added a tablespoon of cardamom, but cinnamon sticks are going great. We put to heat.
  2. Grind 70 g. of coffee beans (100% arabica and natural roasting), without going over power, since we want it to have a texture similar to “coarse sand”.
  3. When the water begins to boil, you are going to see how the water bubbles rise from the bottom, it is time to remove from the fire.
  4. Add the ground coffee to the water and stir. Let stand 2 minutes.
  5. We went to a service coffee maker with a cloth strainer (which is very clean).
  6. In the video you will see that he uses a cloth strainer and a jug to pour the coffee.
  7. We are taking cups of coffee and putting them in the strainer so that the lees are there.
  8. Another option if we do not have the cloth strainer is to take a filter of the paper ones that we put in the coffee maker and a normal strainer.
  9. We serve at the table at the moment. It will be an aromatic coffee, with an intense flavor and a low level of caffeine.

I love coffee made in squid …, it tastes differently than coffee, it is very very easy to make, fast and it is very delicious.
