Without going into details and since there are moments for everything, I will openly admit that I love those potatoes that they prepare in one of those macro-companies of American origin, I am referring to the deluxe potatoes .
It was in this establishment where I tried them for the first time years ago, today it is a dish that we can find in many establishments.
But since I am a kitchenette, what I really love is preparing them at home, with homemade ingredients, Xinzo potatoes, one of the best in Galicia, a good oil to fry them, a mixture of spices that I prepare myself and a rich sauce to accompany them .
Today I leave you the recipe for deluxe potatoes . These potatoes, cooked with their skin, well cleaned and seasoned, tender on the inside and crispy on the outside. Potatoes very well accompanied by a homemade barbecue sauce or a yogurt or mustard sauce are a delicious and original appetizer.

Preparation of Deluxe potatoes
- We wash the potatoes well and put them to cook in a saucepan with enough water so that they are almost covered.
- We cook the potatoes for 10 minutes, drain and let them cool before continuing to handle them.
- If we worked them hot, it would be very easy for the skin to be removed without intending to.
- Once we have the cold potatoes, cut them into large wedges and reserve.
