Perhaps one of the ones that I like the most since in this case the fruit is not only an additional to give it a point of flavor, it is one of the main ingredients. These are some banana muffins where the banana can substitute or complement the rest of the ingredients.

Thanks to the sweetness of the bananas, the amount of sugar that is necessary to prepare this recipe is much less than usual, we could even delete the egg in the case of people with intolerance, since the banana will bring juiciness to the mixture. In addition, the amount of butter is also significantly less than in other preparations of the kind.

  4. Add the dry ingredients that we have reserved and mix with the liquids. It is not necessary to beat the mixture excessively, it is about incorporating the ingredients just right.
  5. Pour the cream in the paper capsules to a little more than 2/3 high. 
  6. The most comfortable way to fill the capsules is to use a spoon. With a tablespoon well filled more or less fill the molds as necessary.
  7. In a bowl mix two tablespoons of sugar with ½ teaspoon of cinnamon and sprinkle on each of the muffins. 

Baking and final presentation of banana muffins

  1. With the oven previously heated to 180º C with heat up and down and without a fan. Bake the muffins for about 25 minutes.
  2. We check that they are well cooked when when you stick them with a stick it comes out clean.
  3. We remove from the oven and let them cool on a rack before consuming them.
