How to make Raffaello chocolates.
Raffaello chocolates are those round delights that we can find in supermarkets and bakeries inside a white box with a red bow. It must ring a bell, it is not in vain that it is said to be the third best-selling chocolate in the world, no less!
We are going to prepare a super-easy and economical version that you can also very easily modify to give it a different touch, for example by replacing the walnuts with any other chopped or whole nuts as the heart of the chocolates.
It is said that chocolates were born at the court of Louis XIV, when a pastry chef presented him with chocolate-covered fruits. The king’s reaction, saying “ bon bon ” gave its name to one of the most famous desserts in history, which from then on would be used to name any filled chocolate.
Here we have already learned how to prepare chocolate and orange bonbons , so the time has come to add a recipe based on white chocolate, at least as delicious!
Preparation of the chocolate base
- We chop the chocolate with our hands and place the pieces in a small bowl. We put it in the microwave and, at minimum power, we melt it. It is very important to monitor the process so that it does not burn or stick, stirring the chocolate from time to time.
- We pour the melted chocolate into a saucepan that we put over low heat. Add the cream and stir continuously until the two ingredients are perfectly mixed.
- We remove from the heat, pour into a bowl and put it in the refrigerator to solidify, for at least 3 hours.
- Crush the cookies with the help of a fork (or in a blender). We do the same with the walnuts and mix everything in a large bowl along with half of the grated coconut.

Shape and final presentation of the Raffaello chocolates
- We take the chocolate and cream mixture out of the refrigerator and mix it with the rest of the ingredients. At first we can use a spatula but it is best to finish with your hands. We knead until we have a uniform-looking ball.
- We cut small pieces of dough and shape them into a ball, the size of a grape. We coat them in grated coconut until they are perfectly coated.

- To make the chocolates we can separate a piece of dough with the help of a spoon. We place it in the palm of the hand and with the help of the other we move until we have a perfect ball.
- We keep the chocolates in the refrigerator so that they remain perfect.
