  4. Grate the skin of the orange and then squeeze it in a glass.
  5. We add the juice and the grated skin to the sugar and the yolks, we also add the milk and the oil. We beat everything with the rods until we have a uniform mixture.
  6. We mix the flour and the yeast and sift it over the previous mixture little by little, beating continuously so that it is incorporated into the mixture and there are no lumps.
  7. While continuing to beat, we also add the chopped almond.

Assemble the egg whites

  1. When the mixture is uniform, add the egg whites until stiff.
  2. At this time it is much better to put the electric mixer aside and use a manual stick so as not to undo the air bubbles. We mix slowly but thoroughly.
  3. In a cupcake tray, place the paper wrappers and fill them with the help of a ladle until a little below the edge (about one centimeter, or a little less if they are small).
  4. Occasionally it is advisable to stir the remaining mixture in the bowl well so that the almonds do not go to the bottom or the last cupcakes will have more than the rest.

  1. We preheat the oven well to a high temperature (220-230º C) so that they then rise well and catch air, due to the contrast of heat. We preheat with “up-down” heat.
  2. Before putting the tray, sprinkle a little chopped almond on top.
