This recipe for homemade muffins is very simple and following the steps of this recipe will come out perfect, I have included a lot of practical tips to ensure success in your preparation.

For example, today we are going to prepare some muffins with chopped almonds and a touch of orange , which gives them a refreshing and crisp flavor that can surprise both the family and your guests.

As if that were not enough, this is one of those dessert recipes that is so simple that even the little ones of the house can help out and it is done in a very short time.

A great way to improvise a breakfast or prepare a very complete snack involving the whole family.

Preparation of the base or cream of the cupcakes

  1. We separate the whites and the yolks from the eggs. As we do, we are placing them in two separate bowls.
  2. With a stick blender we take the egg whites until stiff and reserve.
  3. We put the sugar in the bowl occupied by the yolks and beat until they are mixed.
  4. Grate the skin of the orange and then squeeze it in a glass.
  5. We add the juice and the grated skin to the sugar and the yolks, we also add the milk and the oil. We beat everything with the rods until we have a uniform mixture.
  6. We mix the flour and the yeast and sift it over the previous mixture little by little, beating continuously so that it is incorporated into the mixture and there are no lumps.
  7. While continuing to beat, we also add the chopped almond.

Assemble the egg whites

  1. When the mixture is uniform, add the egg whites until stiff.
  2. At this time it is much better to put the electric mixer aside and use a manual stick so as not to undo the air bubbles. We mix slowly but thoroughly.
  3. In a cupcake tray, place the paper wrappers and fill them with the help of a ladle until a little below the edge (about one centimeter, or a little less if they are small).
  4. Occasionally it is advisable to stir the remaining mixture in the bowl well so that the almonds do not go to the bottom or the last cupcakes will have more than the rest.

Baking and presentation of orange and almond muffins

  1. We preheat the oven well to a high temperature (220-230º C) so that they then rise well and catch air, due to the contrast of heat. We preheat with “up-down” heat.
  2. Before putting the tray, sprinkle a little chopped almond on top.
  3. If the oven has a turbo function, it is advisable to disconnect it so that the muffins rise little by little and do not drop suddenly when leaving.
  4. Bake for 20-25 minutes. When they take around 20 minutes you can start checking with a toothpick if they are done, when it is dry they are ready to go.
  5. We will let them rest so that they settle well and then we have already removed them from the silicone molds.

You can see in this step by step how to prepare this recipe for orange muffins , I am sure you will prepare them on many occasions.

Tips for perfect orange and almond muffins

  • The flour should be wheat and loose, not strength. Preferably “pastry”, which you can easily find in any store or supermarket.
  • To get some muffins with pompadour we will use silicone non-stick molds, where we will introduce the curled paper baskets. We will fill the curled paper molds to ¾ parts capacity. With this amount it is enough to achieve a good pompadour
  • You have to let them cool down and enjoy them as they deserve. The combination of orange and almond gives this cupcake recipe a different yet delicious flavor that leaves no one indifferent.
  • They will be kept in perfect condition for several days. You can place them on a tray and have them covered with a clean cloth, or better yet, store them in a metal cookie box. Just yummy!
  • If you want to prepare other types of muffins on the blog you will find in the dessert recipes section several types of muffins, even muffins that are very similar.
