How to make pearl sugar at home . There is always some ingredient that can complicate the recipe. Either because we can’t find it easily or because we have never used it and we don’t know how it might turn out.
Pearl sugar is one of those ingredients that we find in many baking recipes and we don’t really know where to buy it. There are usually none of them in supermarkets and, if you go to a specialized store, the prices for pearl sugar are too high.
But everything in life has a solution, so if we can’t find pearl sugar, we can make it at home . You can use this recipe for your traditional homemade roscones , delicious waffles or any dessert you can think of. The result will be that sweet and crunchy touch that we like so much.
Preparation of pearl sugar
- In a pot, bring the water to a boil. We mix 300 grams of sugar with the water until it is completely dissolved and the water is thicker.
- Add the rest of the sugar to the mixture and stir little by little until it looks like lumpy sugar. We transfer the mixture to a rigid mold or a taper. We keep the container in a dark place for 15 or 20 days, until all the water evaporates.
- Also, if you are in a hurry, it can be done in the oven at a low temperature or in a dehydrator.
- Once this time has passed, we take the pearl sugar out of the container and pass a rolling pin over it to crumble it. We store the contents in an airtight jar and we will have it ready to use whenever we want.
Tricks for perfect pearl sugar
- Drying time can vary greatly depending on the season of the year and how hot it is where you store it. Think that what you need is for the water to evaporate from the mixture.
- This sugar lasts a long time if you preserve it well, so you can make enough and use it calmly.
- Pearl sugar combines really well with the roscón de reyes, but you can use it in thousands of recipes such as sweet bread, coca de San Juan or anything you can think of.
- It could be made with several types of sugar, but the one that works best is the most refined, white sugar. Undehydrated cane sugars, which usually contain some type of fruit in the mixture, tend to be soft when dried, so they are not advisable.
