Preparing my own bread at home is one of the things that I can do most in the kitchen.

Simple recipe with few complications that will give us the possibility of making delicious bread at home that will delight everyone.

Preparation of the dough and kneading of the bread

  1. In a bowl we add all the ingredients, the flour of force , the salt, the water and the crumbled baker’s yeast. 
  2. If we have a baker’s scraper we will use it, otherwise with the tips of our fingers, we begin to integrate the ingredients of the bowl. Thus we work the dough for 3 or 4 minutes.
  3. We dump the dough on a clean work surface, without flour. We begin to knead by taking the ball with the tips of our fingers, hitting it on the work table, folding it on itself and picking it up again.
  4. This kneading method that you can see in more detail in the video that I attach, is called French kneading.
  5. The dough will still be quite sticky and it is very easy for it to stick to the table and hands, so it is necessary to work it with quick movements.
  6. Knead in this way for 6 or 7 minutes and let the dough rest on the worktable for 10 minutes before continuing the process.
  7. At the end of this time we resume the kneading in the same way. We will see that the dough is much more manageable and that it sticks to our hands considerably less. We continue the kneading 6 or 7 minutes more.

Rest of the bread muffin dough

  1. We form a ball with the dough already worked, and place it in a bowl greased with olive oil covered with a cloth.
  2. We leave it to ferment in a warm place, free of currents, for about 2 hours.
  3. Once the dough has fermented and grown, let’s return it to a work surface, this time yes, floured. With the help of the doctor blade or a failing knife, we divide the dough into 8 more or less equal portions.
  4. We take one of the portions and with both hands we form a ball as homogeneous and smooth as possible.
  5. We proceed in the same way with the rest of the pieces and place them in the oven dish that we will use for baking, on a sulfurized paper.
  6. Sprinkle the buns with flour lightly, cover with a cloth and let them ferment again for 1 hour in a warm place.

Baking and final presentation of bread muffins

  1. We make some decorative cuts on the surface of each bun, once fermented.
  2. With the oven previously heated to 250º C, we introduce the tray with the muffins in the middle tray with temperature up and down.
  3. We also introduce a container with 150 ml. of water in the bottom of the oven. We are going to put a container that can withstand baking with water, with a bowl is enough.
  4. Because baking has some moisture, that steam is crucial to creating a high percentage of humidity in the oven and this causes the muffins to increase in volume. In addition to getting a special color and shine on the bark.
  5. We cook the buns at 250º C for 5 minutes and lower the oven temperature to 220º C.
  6. Bake at 220º C for an additional 20 minutes. We remove the tray from the oven and let the buns cool on a rack before enjoying them.
