The name of mustard , as we know it today, appears in France in 1220, moustarde , derived from the Latin word mustum ardens , or what is the same, burning must .

Around the same time it appears in Spanish with the name of mustard and in Italian as shown. Despite this, it is known that the Chinese, 3,000 years ago, already cultivated this plant for their consumption, both medical and food.

In Greece it was used as a condiment and even the great Pythagoras claimed that it sharpened the wit. The Romans used it both as a medicinal plant and as a seasoning and flavoring for food and drinks.

In the Middle Ages it was when this plant became very popular in Europe since it was used as a condiment for meat, with the intention in many cases of concealing its poor condition due to the difficulties of conservation. It is in the 13th century when the preparation of mustard in sauce appears and becomes famous in Dijón .

I recommend this base for many sauces on the blog for many recipes, from a beef carpaccio accompanied with this sauce, a traditional roasted chicken with mustard , spaghetti with mustard and orange sauce , some caramelized ribs with honey or this chicken curry .

A lot of ideas so that your kitchen has an exotic touch and little by little at home, enjoy new flavors.

Preparation of honey mustard

  1. We put the mustard grains in a bowl and cover them with the vinegar and 100 ml. of water for 12 hours.
  2. After this time we add the rest of the ingredients and crush the mixture with the mixer.
  3. We pass the mixture to a saucepan and cook for 2 or 3 minutes until we see that it begins to thicken. We remove from the fire and pour into a glass jar.
  4. We let the mixture rest for 2 or 3 days in the fridge before consuming it, thus reducing part of its bitterness.
  5. We can preserve the mustard if we put it under vacuum, for several months and once opened for about 2 weeks in the fridge.
