What a great reason our friend Cunqueiro has. In fact, if it weren’t for a rather long date, I would have it tattooed somewhere on the body. It reflects what for me is the kitchen, and specifically, Galician cuisine.
Our kitchen is one of the most famous in the whole country and is characterized by a very varied quality product. If you have this book in your hands, it is that you think like me, if you also know Galicia, you know that eating here is a religion.
Our cuisine is based on a product of excellent quality that makes it one of the best and tastiest in Spain. And that is saying a lot in a country where you eat well everywhere. A cuisine based on the simplicity of a good product, on the tradition and evolution of our dishes.
