Quesadillas are made from Mexican tortillas , mainly corn, but also wheat, which we fill with cheese and a host of other ingredients. If we feel like going into total Mexico mode, we can prepare our own tortillas ourselves. Chicken, ham, mushrooms, meats, vegetables or even prawns are ingredients that we can add to our quesadillas with delicious results, although cheese will almost always be present.

The tortilla is filled with the chosen filling, folded like a book and heated on both sides. If instead of using one tortilla, we use two, one as a base and another as a lid, they will be called synchronized.

The fillings can be as simple as we want. A sautéed vegetable with chicken, the simple and delicious stuffed with ham and cheese, some mushrooms sautéed with mozzarella or the tasty zorza with Galician cheese from my homeland, are the options that I have prepared.

Preparation of zorza and cheese quesadillas

  1. In a frying pan we add the zorza with a splash of olive oil if necessary. Brown the meat on all sides until ready. We cut the Galician cheese into small cubes.
  2. We heat a tortilla in a frying pan without oil. It’s about heating it, not cooking it, so a few seconds on each side will be enough. We add a portion of zorza that does not cover more than half of the tortilla. We cover with a few cubes of cheese.
  3. We fold the tortilla in half so that we have a half moon. Cook for a few minutes, over medium/low heat, pressing with a slotted spoon.
  4. We turn the quesadilla over and cook a few more minutes. The cheese will have melted and will be ready. We remove from the heat.

Preparation of chicken quesadillas

  1. Peel the onion and wash the red pepper well. We cut both into small cubes.
  2. In a frying pan we heat a splash of olive oil. We add the chopped onion and pepper. Sauté the vegetables until they are soft. Add the chicken breast in small cubes. We cook together with the vegetables until ready. We salt and reserve.
  3. We heat a tortilla in a frying pan without oil. It’s about heating it, not cooking it, so a few seconds on each side will be enough. We add a portion of chicken with vegetables that does not cover more than half of the tortilla. We cover with grated cheese.
  4. We fold the tortilla in half so that we have a half moon. Cook for a few minutes, over medium/low heat, pressing with a slotted spoon.
  5. We turn the quesadilla over and cook a few more minutes. The cheese will have melted and will be ready. We remove from the heat.

Preparation of ham quesadillas

  1. We heat a tortilla in a frying pan without oil. It’s about heating it, not cooking it, so a few seconds on each side will be enough. We add one or two slices of cooked ham and others of cheese. We should not cover more than half of the tortilla.
  2. We fold the tortilla in half so that we have a half moon. Cook for a few minutes, over medium/low heat, pressing with a slotted spoon.
  3. We turn the quesadilla over and cook a few more minutes. The cheese will have melted and will be ready. We remove from the heat.

Preparation of mushroom quesadillas

  1. We clean the mushrooms with a damp cloth to remove traces of soil. If we see that they are very dirty, it will be preferable to wash them. We cut the mushrooms into slices. We peel the garlic and cut it into small cubes.
  2. In a frying pan we heat a splash of olive oil. Add the garlic and brown it for a few seconds before adding the sliced ​​mushrooms to the pan. We sauté the mushrooms, salt and add the finely chopped parsley. We integrate and reserve.
  3. We heat a tortilla in a frying pan without oil. It’s about heating it, not cooking it, so a few seconds on each side will be enough. We add a portion of mushrooms that does not cover more than half of the tortilla. We cover with slices of mozzarella cheese.
  4. We fold the tortilla in half so that we have a half moon. Cook for a few minutes, over medium/low heat, pressing with a slotted spoon.
  5. We turn the quesadilla over and cook a few more minutes. The cheese will have melted and will be ready. We remove from the heat.
