INGREDIENTS
- 12 corn tortillas
- 1 1/2 chicken breasts cooked and shredded
- 200 g of grated fresh cheese
- Vegetable oil
- For the green sauce
- 3 serrano peppers
- 8 green tomatoes
- 1/4 of cup of coriander
- 1/4 onion
- 1/2 liter of broth
- Salt to taste

- 2 soaked guajillo chiles
- 2 Tomatoes
- 1/4 onion
- 1/4 of cup of coriander
- 1/2 liter of broth
- Salt to taste

INSTRUCTIONS
- To make the green and red sauces: blend the ingredients of each one, separately, until a homogeneous mixture is obtained; strain them and fry them in different saucepans until they boil; withdraw and reserve.
- Lightly fry the tortillas in a little oil, remove them, fill them with chicken, roll them up and serve two pieces per serving; bathe an enchilada with green sauce and another with red; sprinkle with cheese and serve.
