  • ½ liter of chicken broth
  • 1 tablespoon of flour

  1. The first thing we will do is prepare our broccoli florets, separating the seedlings from the large stem with a knife or scissors. Now we are going to clean the trees in a bowl. To do this, we fill the bowl with cold water (it has to cover all the broccoli) and wash.
  2. The next thing is to peel and finely chop a clove of garlic and half an onion. When we have it, we are going to heat a pot with a tablespoon of extra virgin olive oil. Once the oil is hot, add the garlic and fry for sixty seconds, and then add the onion. We add salt and leave the sauce over medium heat for three minutes.
  3. While it is frying, we cut the broccoli florets into similar portions (in half, for example) and add them to the pot when the three minutes have passed. We mix everything well in the pot and let it cook for a couple more minutes. Now we add the vegetable broth and cover the pot. We lower the heat to medium-low and let it cook for a quarter of an hour.
  4. When the quarter of an hour has passed, we make sure that the broccoli is well cooked with the help of a fork. If it is ready, remove the pot from the heat and beat with a mixer to achieve a cream with a very homogeneous texture.
  5. Finally, we taste to adjust the salt level and add a touch of freshly ground assorted peppers if we like. We stir the cream well and we will have it ready to serve.

Broccoli cream with cheese

The cheese gives a great touch to the broccoli soup, and adding it to the recipe is super easy. We tell you how:

  1. The first thing we have to do is peel and chop the onion into fine pieces. Once we have it, we prepare a saucepan and pour the butter inside. Once inside, we heat it up and melt it.
  2. When the butter is liquid, add the chopped onion and let it brown for five minutes, until it begins to turn transparent.
  3. While it is browning, chop the potato and, when the onion has taken on the transparent color we are looking for, add the chopped potato to the vegetable broth.
  4. Now we lower the heat, put the lid on and let it cook for five minutes. During that time we are going to cut the broccoli into small trees. When the five minutes have passed, we add the broccoli to the saucepan and let it cook for another five minutes.
  5. We check that the broccoli is well cooked and, if it is ready, we remove the pot from the heat and blend everything until we achieve a homogeneous texture.
  6. Then, we put the saucepan on the heat again and pour in the liquid cream and the grated Grana Padano cheese until it melts. We stir well and taste to see the point of salt. We decorate with some cheese slices and some sprouts (optional). Afterwards, it will be ready to enjoy.

Broccoli cream with dairy, the most powerful and flavorful cream

This option is a little more filling, but offers a delicious and satisfying flavor. If what you are looking for is a unique dish, this is the best option.

  1. We will start the same as with the broccoli cream with cheese. Peel and cut the onion into fine pieces. We do the same with garlic. Once we have it, we prepare a saucepan and pour the butter inside. We heat it up and melt it.
  2. When the butter is liquid, add the chopped onion and garlic. We let it brown for five minutes, until it begins to turn transparent.
  3. When it starts to become transparent, add the chopped broccoli and cook for another minute. We also add the cream to combine with the flavors of the vegetables. Now we add the flour along with the salt, pepper and chicken broth. We cover the saucepan and let it cook for ten minutes over low heat.
  4. Once the time has passed, we make sure that the broccoli is well cooked and we beat everything to achieve a homogeneous mixture. We add the sour cream and stir again. Then, return the saucepan to the heat and cook for ten more minutes. As soon as the time has passed, our cream will be ready to taste.
