How to make a cheese cake with sobaos . If there is something that we like to have on hand it is a quick, easy and fruitful dessert recipe that also costs little money and that everyone (or almost everyone) likes. We are sure that we are not the only ones, right?

Today’s recipe, oven-free cheesecake with sobaos, meets all of these requirements. It is prepared in a jiffy and it does not cost any effort to have it ready. Of course, it is important to prepare it a minimum of five hours in advance (better from one day to the next) because it needs to curdle while it cools.

This seems to us an advantage, especially if we choose it as a dessert for a celebration meal, because we can leave it ready the day before and forget about the dessert until it is time to serve it.

To prepare this cheese cake with sobaos we have used a 16 x 8 cm cake pan and we have left a little of the mixture. If you want to double the quantities, you will have to make sure to choose a larger and more capacity mold that does not necessarily have to be a cake mold. You can use any other in any other way, as long as it is not removable or has a leakproof closure.

When you have this cheese cake with sobaos ready, if you want to decorate this cake a little, you can decorate it with pieces of fruit, mint leaves, chantilly cream or anything else you can think of. At the time of serving, we recommend that you bring a sauce boat with liquid caramel to the table, in case someone wants to add an extra splash.

Preparation of the liquid caramel for the cheesecake

  1. We make a light caramel with the sugar and a few drops of water and lemon, follow the steps of the video that I leave you in the recipe just below the step by step.
  2. We put a saucepan or a frying pan on the fire at medium temperature so that it reaches temperature. We add the ingredients in the following order: 100 g. white granulated sugar and a little water (2 tablespoons).
  3. Leave over medium heat without stirring (at first we should not move the sugar with a wooden spoon because it will weigh down). We will see how little by little small bubbles begin to form and the sugar changes color. When this happens we stir, now yes, with a wooden spoon. This way we help to mix everything.
  4. We remove from the fire. We keep stirring until it reaches that roasted honey caramel color.
  5. We add a few drops of lemon juice, these will give shine and will not crystallize quickly. We let it temper for a minute.
  6. We cover the bottom of the cheesecake pan with the caramel. You can also choose to make flanges in individual flannels. We only need a thin layer, although if you are very fond of caramel you can add a little more. We reserve.

Preparation of cheese cake with sobaos

  1. We prepare the filling of the cake and, for this, we chop six sobaos (we reserve the other four for the base) and put them in a large saucepan. Add the cheeses, the powdered curd mix , the milk and the sugar.
  2. The truth is that it does not matter the order in which we add the above ingredients to the saucepan. Here “the order of the factors does not alter the product” because we are going to crush everything with an electric mixer until obtaining a homogeneous mixture. This cream should not notice any of the ingredients (especially from the sobaos).
  3. We place the saucepan over medium-low heat, and heat while stirring with metal rods to ensure that the mixture does not grip the base of the saucepan.
  4. The mixture will begin to thicken due to the heat and we should not allow it to boil, so before this happens we remove the saucepan from the heat and let it temper for five minutes.
  5. Fill the mold with the cake mixture without reaching the edge. We can place a spoon over the caramel and let the mixture slide through it while filling the mold, we will make the top of the cake smooth when we remove it from the mold.
  6. If we want to save this trick, nothing will happen. The flavor will be just as rich.

Final preparation and presentation of the cheese cake with sobaos

  1. We place the sobaos that we have reserved on the surface. We may have to cut one of them to fill gaps and cover the entire cake well.
  2. Cover with transparent film and cool before moving to the fridge where we let it rest and take shape for a minimum of five hours or, better yet, overnight.
  3. At the time of serving the cake, remove the transparent film and place a plate upside down on the mold. We turn quickly so as not to smear caramel on the counter and wait for the cake to fall before removing the pan.
  4. Now it only remains to take to the table, serve and enjoy it.

Tips for a cheesecake with yummy sobaos

  • The truth is that few changes can be made to this recipe to make it richer than it already is, although it occurs to us that preparing liquid caramel at home or using a toffee sauce instead can be a success.
  • It is important to be patient and organize yourself in time so that the cake can rest, cool and curdle in conditions before unmolding. If we go ahead, it could fall apart and our work could be completely tarnished.
  • You don’t need to use the best sobaos on the market. What’s more, the less fatty they are, the better.
  • We recommend using whole milk to make the cake creamier. Although if you are taking care of the line you can use semi-skimmed or skimmed milk and you will hardly notice the difference.
