It is one of those dishes that are exemplary of simple cuisine and at the same time delicious and forceful, perfect for a cold day in which the body asks us for energy.

Well, with very little preparation we can turn the fried eggs of a lifetime into a recipe for broken eggs of those that are served directly in the pan.

A recipe to share among a group of diners, where they add eggs and potatoes to mince meat or fox and serrano ham , like the recipe that we are going to prepare today.

It could not be easier and faster, and the victory is assured, especially when we break the yolks and they soak the rest of the ingredients.

Let us not forget to accompany the broken eggs with good bread so that there is nothing left.

Preparation of the base of the broken eggs. Potatoes and hash

  1. Peel and chop the onion into slices of a good thickness.
  2. Peel the potatoes and wash them in cold water. We cut them into slices half a centimeter thick, more or less, that is, baked potatoes .
  3. We dry the potatoes with absorbent kitchen paper. We reserve.
  4. Peel the garlic and roll it.
  5. We put the onion in a pan with hot oil and cook until it is transparent with a little salt.
  6. In a separate pan, heat the oil, add a piece of potato and when bubbles come out, add the rest.
  7. Fry over medium heat for about 10-12 minutes with the rolled garlic.
  8. The potatoes should not be too crispy, nor cooked. We click them to know when they are in that midpoint.
  9. We remove the potatoes with a slotted spoon and drain them well. We salt and reserve in a source.
  10. We place the potatoes on the onion and leave on low heat.
  11. In another frying pan, fry the hash until it is crisp and pour it over the potatoes.
  12. We chop the ham very fine.

Preparation of the eggs and final presentation

  1. The key point of the recipe is in the eggs. Add to the same pan 1 tablespoon of oil from the potatoes.
  2. We fry the eggs without they finish curdling, they should not be very cooked (the yolk must be liquid).
  3. Add the potatoes with the onion and garlic to the pan. We break the eggs with a wooden spoon. When they are done we sprinkle the ham.

We serve immediately in the same pan. We can either take the plate with the broken eggs or let the guests spread the yolk over the rest of the ingredients.

It is important that this dish is eaten hot to enjoy the mix of flavors.
