The legumes , and in this case the beans , may be present in our menus throughout the year. In summer, with hotter days, they fit perfectly in the cold, adding them to salads.

This chorizo ​​bean stew is quite simple. With some vegetables, a little bacon and some sausages, we will have the recipe ready. I always remember arriving from school, in my time, young women, and taking a tremendous joy to see on the table some delicious beans with chorizo ​​prepared by my mother.

Before cooking the beans

  1. As I have bought some dried white beans, vacuum packed, it is necessary to soak them the day before, the day before.
  2. At least they should be about 10-12 hours in warm water, with a handful of salt, and that completely cover the legumes.
  3. Before starting with the recipe, the water passes to remove impurities, and incidentally we check if there are any damaged or too hard beans. In this way we will avoid encountering it in the pot.

Preparation of beans with chorizo

  1. We wash and peel the vegetables. In a large and high pot, put the beans, half an onion (peeled), the tomatoes without skin, 2 cloves of garlic and the leek (white part).
  2. Cover with water, with a pair of fingers (3-4 cm.) Above the beans. Add the bay leaves.
  3. We put on high heat and bring to a boil. When it begins to boil, lower the heat to low, salt to taste and cook for 1 hour.
  4. We control the casserole, so that it does not run out of water level. Also to remove the foam that may form on the surface, if applicable.
  5. When about 10 minutes are left we put the sofrito.
  6. Chop the remaining onion into “brunoise” and the fine garlic. Fry in a frying pan with a sheet of extra virgin olive oil, and lightly salt.
  7. When the onion is poached, remove from the heat and let it warm.

Cooking and final presentation of the beans with chorizo

  1. Add the tablespoon of paprika and mix well with a wooden spoon (or similar). Without stopping the movement, so that the paprika does not burn.
  2. After the cooking time, remove the vegetables from the casserole. Chop and grind them with the mixer, along with a little cooking water. We went through the Chinese and reserved.
  3. We add to the casserole this vegetable broth, the sofrito, the chorizos and the minced bacon.
  4. We move back and forth, grasping the handles, so that all the ingredients are well integrated.
  5. With everything in the pot, we will cook another 40-45 min. more on low heat.
  6. If necessary, add a little more liquid (hot water). When there are about 10 minutes left, try the beans to check their point, and the broth in case you need to rectify salt.
