How to make brothy rice with carabineros. The enthusiasm and care that we use when preparing our dishes is reflected in the final result. Cooking with “a lot of love” is one of my premises when cooking for my loved ones.
But there are times when that love must be devotion, mainly when top-notch products fall into our hands that, by themselves, would make an exquisite snack. Treating it with the love and respect it deserves will result in an exceptional dish.
This is the case of the recipe we have in hand, carabineros brothy rice , it would be almost on par with our lobster rice . If we are lucky enough to have fresh carabineros, this recipe will increase its price and quality in equal parts. Some carabineros, freshly caught, straight from the Huelva coast, are one of the tastiest seafood we can find.
If we can only get frozen carabineros, it is not that we are going to suffer, there are frozen seafood of magnificent quality that will ensure us a delicious dish, made with all the essence of the sea, full of flavor and color.
The reality is that this soupy carabineros rice is an essential dish. The ingredients are minimal but of quality. The carabineros and the special brothy rice from SOS are the perfect combination to prepare this dish. Getting all the essence out of this phenomenal seafood is all we need to get a dish worthy of the best of tables.
Preparation of carabineros broth
- We clean the carabineros by removing the skins and heads. We will remove his belly, that black thread that runs along his back. If the carabiners are fresh, it will be easy to remove it, simply pulling on the end and it will come out whole. If we find that it is difficult, we can make a small incision along the spine and remove it easily.
- We can leave 3 or 4 carabineros with heads. We will only remove the tail skins. They will serve as decoration for our plate.
- We extract the juices from the heads that we have removed. To do this, we will squeeze them with our hands, letting them release their broth directly into a bowl. We reserve both the juices and the crushed heads.
- In a tall saucepan, heat a splash of olive oil. We add the heads no longer juiced and the skins that we have removed from the tails of the carabineros. We sauté skins and heads for a few minutes.
- We cover with an abundant amount of water, 1.5 to 2 liters, we add the clean leek and the seeded tomato cut into two halves. We cook the broth for 30 minutes. Once the broth is cooked, strain it and set aside.







Preparation of brothy rice with carabineros
- In the casserole that we will later use to cook the soupy rice, we heat a splash of olive oil. We add the carabineros tails and brown them lightly on both sides. We remove the tails and reserve them. It is important not to overcook the carabineros, at the end of cooking the rice they will be added to the casserole and we will achieve one more point in its cooking.
- In the same way, we sauté the carabineros that we have left with our heads. Cook on both sides for 1-2 minutes and set aside.
- In the same pot, with the essence that the police have released, we add the tomato sauce and the juices from the heads that we have reserved. We cook for 5 minutes to concentrate the flavors.
- We add the saffron threads and salt. We add the Sos Especial rice, brothy and melty. Sauté the rice for 2 minutes and pour it over with the wine, cooking it for 2 more minutes while the alcohol evaporates.
- We cover the rice with 1.30 liters of the carabineros broth and cook for 13 minutes. It is important that the broth is hot when you add it to the casserole. This way it will not interrupt the cooking of the rice.
- Once 13 minutes have passed, we add the carabineros tails and the carabineros with heads to the casserole. We continue cooking the rice for 3 more minutes. We serve the rice at the moment. We can sprinkle some finely chopped parsley leaves to give a touch of color to this luxury dish.
