Preparation of roast chicken with apples and mushrooms
- We clean the chicken, removing the remains of feathers and the pieces of fat that it may have. In a large saucepan, heat a finger of extra virgin olive oil.
- Brown the chicken pieces in the oil over medium heat, salt and pepper and turn them from time to time
- Meanwhile, we chop the mushrooms into small pieces. When the chicken pieces have taken color on both sides, remove them from the oil with a slotted spoon.
