The approaching autumn , in a few days we will find days like crazy, heat, rain or cold in the same day.
Now we can say that we are in that season full of contrast and a little melancholic, but without a doubt one of the most exciting of the year.
A station where the range of seasonal products is incredible and invites you to cook on those rainy days, perfect to then go for mushrooms .
The markets are filled with the best seafood , we already have spider crab and spider crab out of season, the prized mushrooms, the hunting season begins, the sea bream is at its best and is the best time to enjoy the canned Bonito del Norte , perfect for spending the harsh winter.
Also, we must not forget that it is time for stews and creams, soups, homemade jams, the first stews and the best party of the year: the Magostos , Magosta, Amagüestu or the chestnut festival.
At this magical time of year we can make spectacular dishes enjoying seasonal vegetables and fruits. It is time to welcome the best moment of apples and citrus and the first mushrooms arrive , the famous Galician chestnuts and the appreciated walnuts (not to mention the pumpkins , the queens of Halloween !).
All Saints’ Day with its wind fritters , saint’s bones and panellets , quite a spectacle.
With the first rains and the drop in temperatures, the homey spirit awakens and we feel like recovering the “stew” recipes : stews, soups and stews are the order of the day. The candies with nuts or apple will be the perfect snack for evenings at home.
Even more so if we accompany them with a cup chocolate or a good coffee. In today’s post I am going to recommend the 12 recipes that are most successful at home in Autumn , good, easy, cheap and especially seasonal.
Pumpkin and curry cream . At this time of year, you definitely want to take a good bowl of cream with any of the vegetables and vegetables that we have in season , very warm to get hot quickly and above all take that amount of vitamins and minerals that the body needs. To combat the arrival of the cold, I propose a simple pumpkin cream with a touch of curry and nutmeg that will make your dinner on the sofa the best in the world
Warm mushroom and goat cheese salad. An impressive autumn salad, with seasonal mushrooms and accompanied by this goat cheese that marries perfectly in flavor and texture. With this salad you will take away the craving of the boring spring salad, new ideas for you to have a complete salad, full of delicious ingredients and above all, delicious.
Mushrooms in tempura with aioli sauce. We are in the middle of the mushroom season, although in this recipe I use thistle mushrooms that we can find throughout the year in the markets. This appetizer does not go with classic egg, flour and a bit of breadcrumbs, but I explain a new concept: tempura. They are also accompanied by aioli, a recipe from a friend from Alicante that always comes out, you try a little and you can not stop dipping, although you know that later the afternoon will be hard and that no kisses.
Boletus edulis toast and caramelized onion . Of all the snacks you will find on the blog, in a short time this has become the most famous. As always, a special recipe wins for its simplicity and flavor. And it is nothing more than a simple crispy bread toast with a small layer of caramelized onion that goes great with the soft touch of hazelnuts that Boletus Edulis gives us . Sounds good right?
Galician soup. The Galician broth does not have a unique recipe and it is that what was at home was put in the casserole, like the Galician stew that changes if it is from Barco de Valdeorras to if they prepare it in Lalín. What is common to all recipes are certain ingredients that are used to a greater or lesser extent: some cachelos, a touch of daub, some broad beans (or the legumes of the season), meat (veal and pork), a good piece of Galician chorizo smoked and seasonal vegetables, usually turnip greens, turnips (turnip sprouts), collard greens or white cabbage.
Galician pork patty with mushrooms. Sounds good huh ?. Well I assure you, it tastes better. If you want to turn your kitchen into a piece of Galicia and that a crispy piece of a Galician pie comes out of the oven to your table … all you have to do is follow this recipe step by step. One of those who call themselves winners since it’s from my grandmother.
Wild boar stew with chocolate sauce and potatoes. A hunting recipe can not miss, I am excited by the powerful flavor of this type of meat. The custom of eating game meat was much more entrenched years ago, especially in the north. Quail was given to my father and I remember eating them as a child as a luxury dish where it was a sin to leave something. Although I love these little birds, the flavor power of the boar’s meat seems incredible to me and its season lasts from mid-autumn to late winter. This stew will not leave you indifferent, I assure you.
Quail stewed with pumpkin, chanterelles and apple . To accompany such exquisite and entertaining meat, we have to design dishes that match and if we are in the autumn season, there is no way to give it a sweet touch with one of the mushrooms that I like the most: chanterelles and the touch of apple and the pumpkin. The garnish is as important as the quail itself, and you will see how impressive the result is.
Chestnut and chocolate cake. This cake is a combination of flavors of this exquisite fruit, chestnut, the touch of glace brown and a final touch of chocolate. I assure you that it will like young and old, a guaranteed success.
Apple sponge cake. If there’s a time to make cupcakes, it’s those homemade weekends where you feel like baking all day. I propose a great option, simple and uncomplicated, where we will crown the flavor with one of the most famous fruits of autumn: apples. Do not leave the opportunity to try it with a good cup of tea or hot coffee.
Fritters of wind or All Saints . A classic dessert for the celebration of all Saints, on November 1st. A delicatessen within everyone’s reach, because although it seems like a difficult recipe it does not have a great complication and it does not have to be a seasonal sweet, they are great at any date of the year, not only in Autumn.
Chocolate and walnut brownies . It’s walnut season , one of those little ones full of flavor. I love them with a little Arzúa-Ulloa cheese, quince jelly or just plain, but if you accompany them with chocolate and if that chocolate comes in the form of a brownie… It goes without saying that the result is great, explosive in the mouth, with that half-done texture that is left between the teeth, you don’t need to write more … right?
