Ingredients
- 8 rice shrimp or prawns
- 200g. small peeled shrimp (or large chopped)
- 200g. crushed tomato
- 1 onion
- 400g. noodle no. 2
- 1 l. shrimp or fish broth
- A few fresh parsley leaves
- Extra virgin olive oil
- Salt and freshly ground black pepper (to each household’s taste)
How to make shrimp fideuá. Prawn fideuá is a simplified version of the classic seafood fideuá. By exclusively containing shrimp , it has a very intense flavor that we really liked. It is very easy to make and the result is exquisite, so we cannot ask for anything more from this typical dish of the Valencian Community, familiar directly from paella .
The ideal is to make a homemade shrimp broth , for which we will only need the 300 g shells and heads. of shrimp, some onion or leek, one and a half liters of water, salt and pepper.
We will use the peeled shrimp to sauté the fideuá. If we don’t want to make the broth we can buy it already made, if we can’t find shrimp we can use a fish broth.
The thickness of the noodles is up to your taste, for this occasion we have used No. 2 but you can use the classic thick ones for fideuá with a hole or the thin ones (angel hair) that require less cooking time and a little less broth.
Preparation of shrimp fideuá
- Chop the garlic very finely and the fresh parsley.
- We cut the onion into small pieces. Pour a good splash of extra virgin olive oil into the paella with a generous pinch of salt.
- We sauté the rice shrimp for a couple of minutes on each side and remove them from the heat and set aside.
- Sauté the onion until it starts to become translucent, stirring occasionally so it doesn’t burn. Add the garlic and parsley, stir and brown for 2-3 minutes.
- Add the peeled shrimp and sauté for 3 more minutes until they have some color. Add the tomato to the sauce and cook for 6 minutes. We add the noodles and stir for a couple of minutes so that they absorb all the flavors well.
Cooking and final presentation of the shrimp fideuá
- We add the broth (if possible it is hot) and distribute the ingredients so that they are not piled up. We taste the broth, adjust the salt and increase the heat.
- We cook between 6-8 minutes over high heat. We add the rice shrimp in an orderly manner and continue cooking until there is hardly any broth left and the noodles are done.

Tips for a perfect shrimp fideuá fideuá
- If you want a homogeneous texture, I recommend that when you chop the garlic, onion and parsley, do it very finely, not puree-like but very finely. It will provide all its flavor and substance but will not interfere when eating the fideuá.
