When we talk about cupcakes what comes to mind are the typical sweet cakes that many of us love for breakfast .

The case is that the thing does not have to stay there, it is actually a very versatile snacks that allow us endless variations. With blueberries, lemon, and chocolate they are options of great sweet muffins, but we cannot forget their salty version.

As an example, these  Italian-style savory muffins are perfect, no longer for breakfast but for lunch, dinner and even snacks, they are the ones we have prepared today, some goat cheese and dried tomato muffins .

In this recipe we combine a creamy goat cheese, some dried tomatoes and a little fresh chive. Just yummy.

Preparation of salty muffins

  1. In a saucepan we heat 50 ml. of water and pour it into a cup. We introduce the dried tomatoes and let them rehydrate for 15 minutes. In a bowl we beat the eggs with the salt.
  2. We add the milk and the extra virgin olive oil. We beat until all the ingredients are integrated.
  3. Cut the cheese into small cubes and the goat cheese and add them to the bowl of liquids.
  4. In another bowl, mix the dry ingredients, flour, yeast and thyme. Add the dry ingredients to the liquid bowl and mix until integrated.
  5. In a cupcake mold, place the paper capsules in each of the holes.
  6. We fill each capsule with the dough taking special care not to fill beyond 2/3 of the height of the mold.

Baking and presentation of savory muffins

  1. We preheat the oven to 180º C, about 10 minutes before baking so that the oven reaches that temperature.
  2. Bake the cupcakes at 180º C in the middle tray (on a tray or not, but try to put them in a resistant paper capsule) for 18-20 minutes. Temperature with heat up and down, with air.
  3. We check that the muffins are ready by clicking with a stick and checking that it comes out clean.
  4. We let our muffins cool on a rack before enjoying them.

Tasting of salty muffins

  • Sprinkle with a very fine chive on top.
  • These muffins can be taken cold, but ideally we should taste them warm, so the cheese will be soft and the aromas much more enhanced.

  • As always the ingredients must be of quality, if you don’t like the cheese, the result won’t either. Tomatoes must be warranty too.
  • At home we can prepare our own dried tomatoes in oil. We simply have to store them in a pot with extra virgin olive oil and the aromatic herbs that we like the most, rosemary, thyme, oregano.
  • I have used a semi-cured goat cheese, but you can use the cheese that you like the most. With goat cheese curlers, this recipe would be delicious.
