The salads, I never tire of repeating it, are full of vitamins, they are nutritious and suitable for all kinds of people as long as we don’t overdo it with the amount of oil and balance the salt when it comes to seasoning. They are the basis of the Mediterranean diet and their habitual consumption, in excess even, helps to reduce the risk of many diseases. You can accompany any dish you propose with a salad and even turn it into a very varied single dish. If you set your mind to it, you can get to eat a daily salad without getting bored. Pasta salad, rice, lettuce, meat, fish, only vegetables … the possibilities are endless.
Salad preparation
- We put the chives and celery in a colander. We pass them in cold water, to avoid that the onion is very strong.
- We have the oranges on the plate forming a flower, alternating them with onion slices. In the center of the flower we put the cod and celery.
- We decorate with the skin of an orange and some basil leaves.
- Season with the virgin olive oil and salt.
