  • Extra virgin olive oil
  • Salt and freshly ground black pepper (to your taste)

  • 2 cloves of garlic

How to prepare Catalan omelette with sausage. We have called this delicious omelet “Catalan” because although it is made the same as a potato omelet, it also includes a white sausage that gives it a delicious and super special touch. It is easy to make and we are going to surprise everyone with this very original version of tortilla.

We have prepared it with white sausage , the kind that is already cooked and we loved it, but it would work just as well with black sausage (although it would have a stronger flavor) or raw sausage . If we use raw sausage we will have to sauté it in the pan for a little longer.

The same thing happens with the cooking times as with the traditional potato omelette, if we like it slightly curdled, we will only need to cook it for a few minutes after adding the egg, turn it over and leave it for a few more minutes. On the contrary, if we like it well curdled, we lengthen the cooking times so that it is to our liking.

Preparation of Catalan omelette with sausage

  1. We peel, wash and cut the potatoes into small pieces. We peel and chop the onion, we also peel the garlic and chop it together with the parsley. We remove the skin from the sausage and chop it.
  2. We pour a good splash of oil into a frying pan and wait for it to heat up. Add the potatoes, season with salt and pepper and mix well. Cook for 10-15 minutes over low heat, stirring occasionally so they don’t burn. Add the garlic and parsley, mix well and cook for another 10 minutes or until the potatoes are tender inside. We remove the potatoes from the pan and set aside.
  3. In the same pan, sauté the sausage for 3-4 minutes. We remove it from the heat and reserve. Add more oil to the pan if necessary and fry until transparent, stirring so it doesn’t burn. We remove it from the heat and reserve.
  4. In a large bowl, beat the eggs with a pinch of salt. We add the potatoes, sausage, onion and oregano. We mix very well to integrate all the ingredients. Pour oil into a non-stick frying pan and add the mixture from the bowl.
  5. We cook for 3-5 minutes depending on whether we like the tortilla more or less curdled. When it starts to set, run a tongue along the sides of the pan to make it easier to turn. With the help of a plate or lid, we turn the tortilla with a quick movement. It is advisable to cover our arm with a cloth to avoid burns. Cook for 2-3 more minutes and turn back onto a plate. We let it cool for a couple of minutes and serve.
