  • 4 tablespoons mild extra virgin olive or sunflower oil
  • The juice of half a lemon
  • 1 clove of garlic, minced
  • 50 g tahini or sesame cream
  • 1 pinch of salt

Despite having Spanish origin, the truth is that Argentines are the ones who have adopted, with great force, mayonnaise as their own. And of course, we can talk about countless versions, like the one we are dealing with today, delicious and easy to prepare “ carrot mayonnaise ”.

Although the original includes hard-boiled eggs and vegetable oil, there is another version for those who cannot or do not want to eat eggs, being vegetarians or vegans. In addition to the multiple ingredient changes that we can find, such as excluding lemon juice, or adding honey, pepper… for tastes, colors.

With this recipe we will get a gluten-free and egg-free carrot mayonnaise in an easy and very simple way, you’ll see. In addition to having a vegetable cream or a similar mayonnaise that is much healthier than the traditional one. Preparation of carrot mayonnaise

  1. We peel (you can just clean them thoroughly) and cut the carrots into cubes. Boil or steam until tender. You should not overcook, we want the cream to have texture.
  2. Once cooked we let them cool and crush them together with the peeled garlic clove, the tahini or sesame cream, the salt and the lemon juice. At home, we usually put everything in the processor or electric grinder until we obtain a smooth and homogeneous cream.
  3. Once crushed, we add oil in a thread while continuing to beat until reaching the texture of mayonnaise. About three or four tablespoons will be enough.
  4. And if you like the touch of extra virgin olive oil, much better than adding sunflower oil, but as I always tell you, to your taste. And you can finish it with a little freshly ground black pepper on top, but totally optional.

Tips for a delicious carrot mayonnaise

  • You can consume it immediately or reserve it in a glass jar for several days. It is usually used as a dressing, but it is also very common to “dip” it.
  • To achieve the desired consistency (thicker or lighter) you can add a little bit of water little by little.
  • How long does carrot mayonnaise last? It is best to put it in the refrigerator in an airtight container, and it can last between 5 to 6 days. It does not freeze well, because when defrosted it will remain as lumps and it loses color and flavor.
