Ingredients

  • 400 g of La Fallera bomb rice
  • 3 tomatoes
  • 1 onion
  • 1 garlic
  • ½ glass of white wine
  • 250 g of chanterelles (rovelló or robellóns)
  • 1,200 l. of water or vegetable broth
  • 70 ml. extra virgin olive oil
  • Salt and freshly ground black pepper (to each household’s taste)
  • 2 bay leaves

This is a traditional recipe that is usually prepared in Autumn, because that is when we find these mushrooms in the field. The recipe is very simple , and the only ingredient that is a little difficult to find is the chanterelle due to its temporality. Preparation of rice with chanterelles

  1. First we cut the garlic and onion very finely, and add them to the pan with a splash of oil so that they cook slowly. While they are cooking, we wash the chanterelles, removing any dirt they may have on them, and cut them into pieces of the same size.
  2. We add the chanterelles to the pan and sauté them for a few minutes. They will release a perfect juice for our recipe. When they are well sautéed, we add the tomato that we have previously peeled and cut into pieces. We sauté everything and add salt and pepper.
  3. We add the white wine and let it cook in the pan for about 7 minutes, until all the ingredients are well cooked. At that moment, we add the rice and sauté it for 3 minutes.
  4. After this time, we add the water and the bay leaf and let everything cook for about 20 minutes, until the rice is well done. We adjust the salt and pepper and, if we see that it is cooked and ready, we remove it from the heat and let it rest for a few minutes with the heat off. Ready to serve.

Tips for perfect rice with chanterelles

  • If we want to give the dish more flavor, we can cook the rice with vegetable broth instead of water.
  • The recipe is designed for dry rice, but it can also be made brothy without any problem, just add more water.
  • If we want to add some meat, we can add chicken or ribs by browning the meat a little before cooking the vegetables and adding it to the recipe.
