  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 2 avocados
  • 1 tomato
  • 1 lime
  • 1 cube of cheddar cheese (to grate)
  • 1 tablespoon Mexican spice mix
  • Hot sauce (to taste)
  • 4 large Mexican wheat tortillas (pre-cooked)
  • Extra virgin olive oil
  • Salt

Mexican cuisine is one of the most loved internationally, and especially in Spain, where a great boom has been taking place in recent years. We can distinguish two aspects: one with the most traditional dishes that are also more unknown to most people, and another with the Tex-Mex preparations that are the most known and widespread.   

Today I bring you a recipe for burritos, one of those typical Tex-Mex dishes , prepared with the famous Mexican tortillas . On the blog you can find the recipe to make them, although for the burritos we need them in a larger size, as we have to make a small package that surrounds the filling.

Tex-Mex cuisine comes from the north of the country, in the border area with the states of Texas and New Mexico (United States). We are all familiar with their best-known dishes, such as tacos , faj i tas , nachos , enchiladas, etc. Specifically, the burrito consists of a wheat flour tortilla (like the larger pro tacos), which is filled with meat, accompanied by various ingredients and drizzled with some sauce (whether spicy or not). It is then rolled into a package and eaten with the hands.

In these burritos we are going to use chicken meat , some sautéed vegetables and another star dish of Mexican cuisine could not be missing, guacamole . As a final touch, a little cheese to give smoothness to the filling. The final result is delicious, so now you can get to work and treat yourself to a Mexican lunch or dinner.

Preparation of the filling. Chicken, vegetables and guacamole

  1. We start by cooking the chicken breast for 20 minutes. After time, we withdraw and reserve. So that it cools down.
  2. Meanwhile, let’s prepare the guacamole . We cut the avocados into halves, remove the central stone and with the help of a spoon, easily remove the fleshy part. We put it in a mortar and mash gently until we get a creamy texture.
  3. Chop the onion into fine brunoise. Tomatoes in small dice, of similar size. We add to the avocado, salt to taste, squeeze the lime juice. We mix well. We reserve for later, when we assemble the burritos.
  4. Cut the onion into julienne strips, and the peppers into strips of similar size and thickness. In a frying pan, with a little extra virgin olive oil, sauté over high heat for a couple of minutes. We salt to taste.
  5. We lower the heat to medium, add a little more oil and continue cooking for another 5 minutes. We want a crunchy texture but we also want the vegetables to be well cooked.
  6. We shred the chicken with the help of our hands. Add to the pan, mix and sauté over medium heat. We add 1 tablespoon of the Mexican spice mix, plus a little hot sauce (to taste). We mix again. We continue cooking for about 5 minutes over medium heat.

  1. We heat the wheat tortillas (which are already pre-cooked) in a large frying pan or in the microwave. One minute on each side is enough. Anyway, look at the instructions on the package.
  2. To assemble the burrito, we place a base of filling from the pan, continue with the guacamole and finally grate cheese. With our hands, we close the tortilla making a package.
  3. To present on the table, we cut the burritos in half. We accompany it with spicy sauce, in a bowl, in case someone wants to give more joy to the dish.

  • I have made the guacamole in this case without cilantro, which would be with the most puritanical recipe. You can include a small amount if you like it a lot, but I didn’t want its intense flavor to monopolize the filling.
