How to make truffles of various flavors. 3 truffle recipes.
The truffles are ideal for any occasion, for special occasions, but also to take or how sweet dessert with coffee on any given day.

On this occasion we have prepared 3 different flavors following the advice of Isa Fabrisa ; dulce de leche, almond and chocolate. The truffles of fresh milk have triumphed at home, especially among children.

The only drawback they have -apart from the calories- is that they are so soft that only with the refrigerator they can’t stand the type, so the best way to keep the ball shape is to put them in the freezer and take them out shortly before consuming.
The chocolate truffles and of almonds in the refrigerator are perfect, does not freeze missing. And with just a few minutes of preparation and a while in the fridge / freezer we will have them ready. The difficult thing is going to be to stop eating them, but with the speed that they are made we can prepare in quantity for all the guests and be able to repeat.

Dulce de leche truffles
- To prepare the dulce de leche truffles, mix the dulce de leche with the condensed milk and stir.
- Add the crushed cookie, save two or three tablespoons to coat. Stir until you have a homogeneous mixture and put it in the freezer for an hour.
- After the time in the freezer, we make balls with portions of dough and we coat them with the crushed cookie that we had reserved.
- We store the truffles again in the freezer and take them out 15 minutes before serving.
Almond truffles
- To prepare the almond truffles we put a saucepan over medium heat. We add the condensed milk, the almond and the egg yolk.
- Stir until everything is well integrated and keep the dough in the refrigerator for at least an hour.
- After this time we form balls with portions of dough and coat with the chopped almond.
- We keep in the refrigerator and take them out 15 minutes before consuming.
Chocolate truffles
- To prepare the chocolate truffles, melt the butter in a saucepan over low heat.
- Add the condensed milk and cocoa. We can also use fondant chocolate instead of cocoa. We save 2-3 tablespoons of cocoa to coat.
- Stir until it thickens and keep the mixture in the refrigerator for at least an hour.
- We make balls with portions of dough and coat with the cocoa that we had reserved.
- We keep in the refrigerator and take them out 15 minutes before consuming.
- Optionally we can put the truffles in mini-capsules to make it more beautiful and the guests do not get their fingers dirty.

Tips for perfect flavored truffles
- Such a small bite deserves the best quality ingredients possible.
- If we coat the almond truffles with almond crocanti that we can buy ready-made they will have a very rich touch.
- We can also use white chocolate for chocolate truffles or alternate several types, all of them are great.
