Ingredients
- 200 g of special pastry wheat flour
- 175g. of sugar
- 125g. of butter
- 15 ml. vanilla essence
- 50 ml. whole milk

During this time there are lots of traditional sweets that we can taste, such as the typical carnival ears or the delicious carnival pancakes . But not everything is tradition, this world has been joined by other sweets that are here to stay.
Today we add another sweet to the list in case you want to change the record a little during these carnivals. This carnival cupcakes recipe is perfect for those who want to get started in the world of baking , because it is not very difficult and the result is spectacular, so you will want to repeat it with more sweets.

Preparation of carnival cupcakes
- We pour the butter at room temperature into a container and add the sugar. We mix everything until we have a creamy texture.
- In another container we add the eggs and beat them for 5 minutes. Once they are beaten, we add them with the butter and knead the mixture until it is completely uniform.
- Once we have the mixture ready, we add flour, yeast, the zest of a lemon and vanilla essence. We beat the mixture well and while we add the milk until everything is well integrated.
- When we have the dough ready, we distribute it into the molds trying to have a third of the free volume left for when the cupcakes rise. Let’s not go overboard filling the cupcake molds. It is the typical mistake that we have all made at some point: we put too much dough, we get the feeling that they are not going to turn out well and we miss the mark by a little or a lot.
- We preheat the oven to 180º C and when it is ready, we put the cupcakes in for 20 minutes. When they have 2 minutes left, poke them with a toothpick to see if they are ready or need a little more time. Once they are well baked, we take them out of the oven and let them rest for 5 minutes before removing them from the mold and decorating them so that they do not fall apart.
Preparation of cheese frosting
- To prepare the cream, beat the cream cheese with the icing sugar and vanilla essence in a bowl with an electric mixer, at medium-high speed, until it has a consistency similar to that of whipped cream . I advise you that the cheese is at room temperature, so it will be easier for us to beat it with the sugar. We reserve.
- We reduce the speed to minimum and add the melted but not hot butter. Once incorporated into the mixture, increase to medium-high speed and beat for another minute.
- We place it in a pastry bag and keep it in the refrigerator until it is time to use it for the filling and decoration of the Carnival cupcakes. If we want to tune the frosting, give it our own touch or flavor it, we can add the zest of a lemon or lime, a tablespoon of vanilla extract, a few pieces of chocolate or a pinch of cinnamon. To your liking.
Final decoration of the Carnival cupcakes
- To start covering the cupcakes with pastry bag, they must be cold. Otherwise, the frosting would lose its initial consistency. You only need to put the adapter with the chosen nozzle on your pastry bag, also without it (just cutting the tip).
- We take the sleeve from the top, to help the cheese frosting go down towards the nozzle, therefore we will press from the height of the closure.
- With the sleeve placed vertically over the cupcake, we start from the center outward until we reach the outer edge. Decorate to your liking, although in the photo you have an idea of presentation. Easy, right?
Tips for perfect carnival cupcakes
- To mix the ingredients, the ideal is to do it with a mixer. You can do it by hand without a problem, but it will take more work. If you are going to make them with the little ones at home, have the oven already preheating and the ingredients prepared and ready to start the recipe. This way they won’t get bored and will do the steps you tell them. It’s from my own experience.
- Use the ingredients at room temperature. The butter, if it is too cold, will make horrible lumps, or the egg, if it is freshly taken out of the refrigerator, will have a harder time incorporating into the mixtures. Even milk should be at room temperature.
- You should not beat the cupcake batter more than necessary. It is very important that as soon as you have the ingredients incorporated and mixed, you stop beating, because if you continue, you will end up with a much more compact and dense cupcake and that is not the idea, we want lightness and softness and air inside it. .
