  1. We preheat the oven to 180º C and while we make the caramel.
  2. In a small saucepan put the 5 tablespoons of sugar and heat over high heat.
  3. When we see that it begins to take color we lower the fire a little and tilting the saucepan we move it until we see that the sugar has turned golden.
  4. Be very aware of the candy as it is very easy for it to burn and become bitter.
  5. We have to be especially careful when handling it as it reaches a very high temperature during the process. A caramel burn would be fatal.
  6. We can also skip this step and use ready-made caramel, so the work would be zero. We pour the liquid caramel in the flaneras.

Baking of oranges a la madrileña

  1. We cut the other orange into very thin slices and put them on the fire with water and sugar until soft. Then we remove them and cut into small pieces.
  2. We put the oranges on top of the liquid caramel. If the flaneras are large enough we can place a whole slice.
  3. We distribute the rice in the flaneras with the help of a spoon.
  4. We place the flaneras in a source that we later fill with already hot water, so that it almost covers them completely.
  5. We lower the oven temperature to 150º C and bake for 35 minutes with the temperature above and below with air.
  6. When they are done, remove them from the mold with the help of a knife and giving a dry blow on the kitchen board.
  7. We place with the help of a spatula, bathing with liquid caramel and sprinkling a little more orange zest on top.
