  2. Let it cook for 30 minutes, stirring frequently.
  3. Add the sugar, stir well and leave for at least 30 more minutes. After that time we check if it is well done, otherwise we will leave it for a while. We have to keep stirring so that it doesn’t stick from time to time.
  4. We remove the rice pudding from the heat and grate half an orange on top, mix well with a spatula.
  5. We wait for it to be warm and at that moment we add 4 egg yolks, which we stir very well so that it is evenly distributed.

Preparation of the caramel

  1. We preheat the oven to 180º C and while we make the caramel.
  2. In a small saucepan put the 5 tablespoons of sugar and heat over high heat.
  3. When we see that it begins to take color we lower the fire a little and tilting the saucepan we move it until we see that the sugar has turned golden.
  4. Be very aware of the candy as it is very easy for it to burn and become bitter.
  5. We have to be especially careful when handling it as it reaches a very high temperature during the process. A caramel burn would be fatal.
  6. We can also skip this step and use ready-made caramel, so the work would be zero. We pour the liquid caramel in the flaneras.
